Ingredients
For the Kachori:
1 cup all-purpose flour (maida)
2 tbsp ghee or oil
A pinch of salt
Water (for kneading)
Oil (for deep frying)
For the Filling:
½ cup soaked moong dal (yellow lentils)
1 tsp fennel seeds
1 tsp cumin seeds
½ tsp coriander powder
½ tsp red chili powder
Salt to taste
A pinch of asafoetida (hing)
1 tsp dry mango powder (amchur)
1 tbsp oil
For the Toppings:
1 cup fresh curd (yogurt), whisked with a little sugar and salt
2 tbsp tamarind chutney
2 tbsp green chutney (mint-coriander)
1 tsp red chili powder
1 tsp roasted cumin powder
A pinch of black salt
Chopped fresh coriander leaves
Sev or boondi (optional)
Preparation Steps
1. Prepare the Dough
In a large bowl, mix flour, ghee/oil, and salt.
Add water gradually and knead into a soft dough.
Cover and let it rest for 20-30 minutes.
2. Prepare the Filling
Drain soaked moong dal and coarsely grind it.
Heat 1 tbsp oil in a pan, add cumin seeds and fennel seeds.
Add hing, ground dal, and sauté for 4-5 minutes.
Add spices — chili powder, coriander powder, amchur, and salt.
Cook until the mixture becomes dry. Let it cool.
3. Shape and Fry the Kachoris
Divide the dough into equal portions and flatten each into a small disc.
Add a spoonful of the dal filling in the center and seal the edges.
Gently roll it again to form a thick disc.
Heat oil and deep fry on medium-low heat until golden and crisp.
4. Assemble the Dahi Kachori
Slightly crush the fried kachoris on a serving plate.
Pour whisked yogurt over them.
Drizzle tamarind and green chutneys.
Sprinkle roasted cumin powder, red chili powder, and black salt.
Top with coriander leaves and sev or boondi for added crunch.
Tips:
Always fry kachoris on medium heat to get that crispy texture.
Adjust chutneys as per your spice and tanginess preference.
You can prepare the kachoris in advance and assemble them just before serving.
Serve & Enjoy!
