Macaroon cake is a delicious and elegant dessert that combines the light, airy texture of macarons with the richness of a cake. This delightful treat is perfect for special occasions or as an indulgent treat for yourself.
Ingredients:
For the Cake:
1 cup almond flour
1 cup all-purpose flour
1 cup sugar
1/2 cup unsalted butter, softened
4 large eggs
1/2 cup milk
1 tsp vanilla extract
1 tsp baking powder
1/4 tsp salt
For the Macaroon Topping:
2 egg whites
1/2 cup sugar
1/2 cup shredded coconut
1/2 tsp vanilla extract
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a cake pan with parchment paper.
Prepare the Cake Batter: In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Combine Dry Ingredients: In a separate bowl, mix almond flour, all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until smooth.
Pour and Bake: Pour the batter into the prepared cake pan and smooth the top. Bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
Prepare the Macaroon Topping: While the cake is baking, whisk the egg whites in a clean bowl until soft peaks form. Gradually add sugar and continue whisking until stiff peaks form. Gently fold in the shredded coconut and vanilla extract.
Add the Topping: Remove the cake from the oven and carefully spread the macaroon mixture on top. Return the cake to the oven and bake for another 10-15 minutes until the topping is golden brown.
Cool and Serve: Allow the cake to cool completely before slicing. Serve as is or with a dusting of powdered sugar for an extra touch of sweetness.
