Loaded Nachos with Colorful Toppings
Ingredients:
For the Nachos Base:
1 large bag tortilla chips (plain or lightly salted)
1 cup cheddar cheese, shredded
1 cup mozzarella cheese, shredded
Colorful Toppings:
½ cup red bell pepper, diced
½ cup yellow bell pepper, diced
½ cup green bell pepper, diced
½ cup sweet corn kernels (boiled or canned)
½ cup black beans (boiled or canned)
¼ cup red onion, finely chopped
1 fresh tomato, deseeded and diced
2 tbsp jalapeños (optional, sliced)
2 tbsp fresh cilantro, chopped
Optional Add-ons:
¼ cup olives (black or green, sliced)
Sour cream or Greek yogurt (for garnish)
Guacamole (for serving)
Salsa (for dipping)
Instructions:
Preheat the oven:
Preheat your oven to 180°C (350°F).
Layer the nachos:
On a baking tray or oven-safe dish, spread a layer of tortilla chips. Sprinkle a mix of cheddar and mozzarella cheese over the chips.
Add veggies:
Sprinkle the colorful toppings (bell peppers, corn, beans, onion, tomato, jalapeños, olives) over the cheese layer.
Repeat layering:
Add another layer of chips and repeat the cheese and veggie toppings.
Bake:
Bake in the preheated oven for 8–10 minutes, or until the cheese is melted and bubbly.
Garnish:
Remove from oven, garnish with fresh cilantro. Add sour cream dollops and serve with guacamole and salsa.
Pro Tip:
Want a protein-packed version? Add grilled paneer cubes or sautéed mushrooms.
For extra heat, sprinkle red chili flakes or use spicy salsa.
