Ingredients
For the Veggie Cream Cheese Spread:
1 cup (225g) cream cheese (softened)
2 tablespoons finely chopped carrots
2 tablespoons finely chopped red bell pepper
2 tablespoons finely chopped green onions (or chives)
1 tablespoon finely chopped red onion (optional)
Salt and black pepper to taste
For Assembly:
1 everything bagel (cut in half and toasted)
Optional toppings: sliced cucumber, smoked salmon, or sprouts
Instructions
1. Make the Veggie Cream Cheese:
In a bowl, add the softened cream cheese.
Mix in the chopped carrots, red bell pepper, green onions, and red onion.
Stir until everything is well combined and the mix looks colorful and creamy.
Season with a pinch of salt and pepper. Mix again.
(Optional: Let it chill in the fridge for 15–30 minutes for better flavor.)
2. Toast the Bagel:
Cut your everything bagel in half and toast until golden and slightly crispy.
3. Assemble:
Generously spread the veggie cream cheese on one half of the toasted bagel.
Top with the other half.
Add any extras like cucumber slices or smoked salmon if desired.
4. Serve and Enjoy!
Serve warm with a cup of coffee or tea.
