Diwali, the Festival of Lights, is not only a time for celebration and joy but also a culinary extravaganza filled with delicious treats and sweets. This year, as you light diyas and celebrate with family and friends, why not whip up some traditional dishes that embody the spirit of Diwali? Here are some beloved recipes to make your Diwali celebrations even more special.
1. Sooji (Semolina) Ladoo
A classic sweet, these ladoos are made from semolina, ghee, and sugar, flavored with cardamom and garnished with nuts.
Ingredients:
1 cup semolina (sooji)
½ cup ghee
¾ cup sugar
½ cup milk
½ teaspoon cardamom powder
Chopped nuts (cashews, almonds) for garnish
Instructions:
In a pan, heat ghee and add semolina. Roast until golden brown and aromatic.
Add milk and cook until the mixture thickens.
Stir in sugar and cardamom powder, mixing well until it forms a dough-like consistency.
Allow it to cool slightly, then shape into small balls (ladoo).
Garnish with chopped nuts and serve.
2. Aloo Tikki
These crispy potato patties are a popular snack during Diwali and can be served with chutney or yogurt.
Ingredients:
2 cups boiled and mashed potatoes
1 teaspoon cumin seeds
1 teaspoon red chili powder
1 teaspoon garam masala
Salt to taste
½ cup breadcrumbs
Oil for frying
Instructions:
In a mixing bowl, combine mashed potatoes, cumin seeds, red chili powder, garam masala, and salt. Mix well.
Form small patties from the mixture and coat them with breadcrumbs.
Heat oil in a pan and fry the patties until golden brown on both sides.
Serve hot with mint chutney or tamarind sauce.
3. Karanji (Gujiya)
These sweet dumplings filled with a mixture of coconut and jaggery are a Diwali favorite.
Ingredients:
2 cups all-purpose flour
½ cup ghee
Water (as needed)
1 cup grated coconut
½ cup jaggery (grated)
½ teaspoon cardamom powder
Oil for frying
Instructions:
In a bowl, mix all-purpose flour and ghee until crumbly. Gradually add water to form a dough. Set aside.
In a pan, combine grated coconut, jaggery, and cardamom powder. Cook until the jaggery melts and the mixture thickens.
Roll out small circles from the dough, place a spoonful of the filling in the center, and fold the circle over to form a semi-circle. Seal the edges with a fork.
Heat oil in a pan and fry the karanjis until golden brown.
Drain on paper towels and serve.
4. Chivda (Poha Mix)
A savory snack made with flattened rice, peanuts, and spices, perfect for munching during festivities.
Ingredients:
2 cups flattened rice (poha)
½ cup peanuts
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon turmeric powder
Salt to taste
Chopped green chilies and curry leaves
Instructions:
In a pan, heat oil and add mustard seeds. Once they splutter, add peanuts, green chilies, and curry leaves.
Stir in turmeric powder and salt.
Add flattened rice and mix well until evenly coated.
Roast for a few minutes until crisp. Allow to cool and store in an airtight container.
5. Mysore Pak
A rich and indulgent sweet made from gram flour, ghee, and sugar.
Ingredients:
1 cup gram flour (besan)
1 cup ghee
1 cup sugar
½ cup water
Instructions:
In a pan, heat ghee and add gram flour, roasting until it turns fragrant.
In another pan, boil sugar and water to form a syrup.
Gradually add the syrup to the roasted gram flour, stirring continuously until it thickens.
Pour the mixture into a greased plate and allow it to set. Cut into squares once cooled.
