Ingredients:
1/2 cup basmati or short-grain rice
1 liter (4 cups) full-fat milk
1/4 cup sugar (adjust to taste)
100 g dark chocolate (chopped) or 1/2 cup semi-sweet chocolate chips
1/2 tsp vanilla extract
1/4 tsp cinnamon powder (optional)
A pinch of salt
2 tbsp cocoa powder (optional, for richer flavor)
2–3 tbsp chopped mixed nuts (almonds, cashews, pistachios, walnuts)
1 tbsp raisins (optional)
1 tsp ghee or unsalted butter (for toasting nuts)
Instructions:
Rinse and Cook Rice:
Rinse rice thoroughly and cook in 2 cups of water until soft. Drain any excess water if needed.
Prepare Milk Base:
In a heavy-bottomed saucepan, bring milk to a boil. Lower the heat and simmer until it reduces slightly.
Add Rice to Milk:
Add the cooked rice to the milk. Simmer on low heat for 15–20 minutes, stirring often until thick and creamy.
Add Chocolate & Flavorings:
Stir in chopped chocolate, sugar, cocoa powder (if using), vanilla, cinnamon, and a pinch of salt. Mix until chocolate melts and blends completely.
Toast Nuts (Optional):
In a small pan, heat ghee or butter. Toast the chopped nuts and raisins until golden and fragrant.
Combine & Finish:
Add the toasted nuts and raisins to the pudding. Stir well and cook for 2–3 more minutes.
Serve:
Serve warm or chilled. Garnish with extra chopped nuts or a drizzle of chocolate sauce if desired.
