Poha, a light and flavorful dish made from flattened rice, is a popular breakfast option in many Indian households. Packed with nutrition and ready in minutes, this recipe is perfect for a quick, satisfying meal.

Ingredients (Serves 2)

1 cup Poha (flattened rice)

1 tbsp Oil

1 tsp Mustard seeds

1 tsp Cumin seeds

8-10 Curry leaves

1-2 Green chilies (finely chopped)

1 medium Onion (finely chopped)

1 small Potato (peeled and diced)

1/4 tsp Turmeric powder

1 tsp Sugar (optional)

Salt to taste

2 tbsp Roasted peanuts

Juice of half a lemon

Fresh coriander leaves (chopped, for garnish)

Instructions

Prepare the Poha:

Rinse poha in a colander under running water for 1-2 minutes.

Drain and set aside. Sprinkle a little salt and sugar on the poha and mix gently.

Cook the Vegetables:

Heat oil in a pan. Add mustard seeds and let them splutter.

Add cumin seeds, curry leaves, and green chilies. Sauté for a few seconds.

Add chopped onions and cook until translucent.

Add diced potatoes, a pinch of salt, and turmeric powder. Cover and cook until the potatoes are tender.

Mix in the Poha:

Add the prepared poha to the pan. Mix gently to coat it with the turmeric and spices.

Add roasted peanuts and cook for 2-3 minutes on low heat.

Finish with Lemon and Garnish:

Turn off the heat and squeeze lemon juice over the poha.

Garnish with fresh coriander leaves.

Serve:

Serve hot with a side of tea or buttermilk for a complete breakfast experience.
