Spaghetti Aglio e Olio is a traditional Italian pasta dish known for its simplicity and rich, garlicky flavor. It requires only a few ingredients but delivers a wonderfully satisfying taste. Perfect for a quick dinner, this dish can be made in just 15 minutes!
Ingredients
400g (14 oz) spaghetti
6 cloves garlic, thinly sliced
1/3 cup extra virgin olive oil
1/2 teaspoon red pepper flakes (adjust to taste)
Salt (for pasta water)
Fresh parsley, chopped (for garnish)
Parmesan cheese (optional)
Instructions
Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.
Prepare the Garlic and Oil
In a large skillet or frying pan, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes. Sauté gently, stirring frequently, until the garlic is golden and fragrant, but not browned. This should take about 2–3 minutes. Be careful not to burn the garlic, as it can turn bitter.
Combine the Spaghetti and Sauce
Add the drained spaghetti to the skillet with the garlic and oil. Toss the spaghetti, adding a bit of the reserved pasta water if needed, to help coat the pasta evenly with the oil and garlic mixture. Keep tossing until everything is well combined.
Garnish and Serve
Sprinkle with freshly chopped parsley for added freshness and a pop of color. Optionally, add grated Parmesan cheese on top. Serve immediately, and enjoy!
Tips
Extra Flavor: For a bit more depth, add a squeeze of fresh lemon juice or a handful of baby spinach at the end.
