Blueberry Cheesecake Parfait

Ingredients:

For the cheesecake layer:

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the blueberry topping:

1 1/2 cups fresh blueberries

2 tablespoons sugar

1 tablespoon lemon juice

For the crust layer:

1 cup graham cracker crumbs

3 tablespoons butter, melted

2 tablespoons sugar

Instructions:

Prepare the cheesecake layer:

In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.

In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold the whipped cream into the cream cheese mixture. Set aside.

Prepare the blueberry topping:

In a small saucepan, combine the blueberries, sugar, and lemon juice. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the blueberries release their juices and the mixture thickens slightly. Let it cool.

Prepare the crust:

In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Spoon a layer of this mixture into the bottom of serving glasses or jars.

Assemble the parfaits:

Layer the cheesecake mixture on top of the crust. Add the blueberry topping over the cheesecake layer.

Repeat the layers, finishing with the blueberry topping on top.

Chill:

Refrigerate the parfaits for at least 2 hours before serving to allow the layers to set.

Serve:

Garnish with extra fresh blueberries or a sprig of mint if desired. Enjoy!
