Dal Baati is a quintessential dish from Rajasthan, India, known for its hearty flavors and rustic charm. It’s a perfect combination of spicy lentil curry (Dal) served with baked wheat balls (Baati), usually accompanied by a dollop of ghee (clarified butter). This wholesome meal is not just a treat to the taste buds but also a celebration of Rajasthani culinary heritage.

Ingredients

For Dal:

1/2 cup Toor dal (pigeon peas)

1/4 cup Moong dal (yellow lentils)

1/4 cup Chana dal (split Bengal gram)

1 tsp turmeric powder

1 tsp red chili powder

1 tsp cumin seeds

2-3 dried red chilies

1 tbsp ghee

1 onion, finely chopped

1 tomato, finely chopped

1 tbsp ginger-garlic paste

Salt to taste

Fresh coriander leaves for garnish

For Baati:

2 cups whole wheat flour

1/4 cup semolina (rava)

1/2 tsp baking powder

1/4 cup ghee (for dough and brushing)

Salt to taste

Water as needed

Preparation

Making the Baati:

In a mixing bowl, combine wheat flour, semolina, baking powder, and salt.

Add ghee and mix well until the mixture resembles breadcrumbs.

Gradually add water and knead to form a firm dough.

Divide the dough into small equal-sized balls.

Preheat the oven to 180°C (350°F).

Place the dough balls on a baking tray and bake for 25-30 minutes, turning occasionally for even baking.

Once golden and crisp, remove from the oven and brush generously with ghee.

Preparing the Dal:

Wash and soak all the dals together for 30 minutes.

Pressure cook the dals with turmeric and salt until soft.

Heat ghee in a pan, add cumin seeds and dried red chilies.

Add chopped onions and sauté until golden brown.

Add ginger-garlic paste and cook until raw smell disappears.

Add chopped tomatoes and cook until soft.

Mix in red chili powder.

Add the cooked dal to the pan and simmer for 10-15 minutes to blend the flavors.

Garnish with fresh coriander leaves.

Serving

Serve hot dal with crispy baatis. Traditionally, baatis are broken and dipped in dal, and topped with an extra spoonful of ghee. Accompany this with a side of tangy chutney or garlic chutney and a bowl of kadhi or buttermilk.
