1/2 cup (115g) unsalted butter
1 cup (200g) granulated sugar
2 large eggs
1 tsp vanilla extract
1/3 cup (35g) unsweetened cocoa powder
1/2 cup (65g) all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
1/2 cup chocolate chips or chopped dark chocolate (optional for extra richness)
Ingredients for the Vanilla Ice Cream (no churn method)
2 cups heavy cream (chilled)
1 can (14 oz) sweetened condensed milk
2 tsp pure vanilla extract
Instructions
Step 1: Make the Vanilla Ice Cream (Prepare Ahead)
In a large bowl, whip the chilled heavy cream until stiff peaks form.
Gently fold in the sweetened condensed milk and vanilla extract until smooth and well combined.
Transfer to an airtight container and freeze for at least 6 hours or overnight.
Step 2: Prepare the Brownie Batter
Preheat your oven to 175°C (350°F). Grease and line an 8-inch square baking pan with parchment paper.
In a medium saucepan, melt the butter over low heat. Remove from heat and stir in sugar, eggs, and vanilla.
Sift in cocoa powder, flour, salt, and baking powder. Stir until just combined.
Fold in chocolate chips if using.
Pour the batter into the prepared pan and smooth the top.
Step 3: Bake the Brownies
Bake for 20–25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Let the brownies cool in the pan for 10 minutes, then lift them out and cool completely on a wire rack. Cut into squares.
To Serve
Warm a brownie square slightly in the microwave for about 10–15 seconds.
