Faluda is a traditional and popular dessert enjoyed in many parts of India, often served as a refreshing treat during the hot summer months. It’s a sweet, chilled dessert made with vermicelli, sweet syrup, milk, and often topped with rose water, basil seeds, or fruits. Perfect for any occasion, Faluda is a beautiful blend of flavors and textures, offering a sweet and creamy experience with a refreshing twist.

Ingredients:

1/4 cup Faluda sev (vermicelli)

2 cups chilled milk

2 tablespoons rose syrup (or rose water and sugar)

1 tablespoon basil seeds (sabja)

1-2 tablespoons sugar (optional)

Crushed ice

Chopped fruits (optional: mango, pomegranate, etc.)

Saffron strands (optional)

Chopped nuts (cashews, almonds) for garnishing

Instructions:

Soak the Basil Seeds (Sabja):

Start by soaking basil seeds in water for about 30 minutes. Once they expand, drain the water and set them aside.

Prepare the Faluda Sev:

Boil water in a pan and add the Faluda sev (vermicelli). Let it cook for about 5-7 minutes until the vermicelli is soft and transparent.

Drain the cooked vermicelli and rinse it with cold water to stop the cooking process. Set aside.

Prepare the Milk:

In a bowl, mix the chilled milk with rose syrup. Add sugar to taste, depending on how sweet you want it. Stir well to ensure it’s evenly sweetened. You can also add a few strands of saffron for extra flavor and color.

Assemble the Faluda:

In a tall glass or serving bowl, start by layering the soaked basil seeds at the bottom.

Add a layer of the cooked faluda sev over the basil seeds.

Pour the sweetened rose milk mixture over the layers.

Add Ice and Garnish:

Add a handful of crushed ice to chill the faluda further.

Garnish with chopped fruits, saffron strands, and chopped nuts like cashews and almonds for added crunch and flavor.

Serve:

Serve the Faluda immediately for a delicious, refreshing treat.
