Looking to elevate your morning routine? These warm, fluffy Apple Pancakes are the perfect blend of sweet, spiced comfort and nutritious goodness. Packed with grated apples, cinnamon, and a hint of vanilla, this easy recipe brings the flavors of fall to your breakfast table—any day of the year.

Ingredients:

Dry Ingredients:

1 cup all-purpose flour

1 tbsp sugar (or brown sugar for richness)

1 tsp baking powder

½ tsp baking soda

½ tsp ground cinnamon

¼ tsp salt

Wet Ingredients:

1 large egg

¾ cup milk (dairy or plant-based)

1 tsp vanilla extract

1 tbsp melted butter (plus more for cooking)

Fruits & Add-ins:

1 medium apple, peeled and grated (Granny Smith or Honeycrisp work well)

Optional: ¼ tsp ground nutmeg, a handful of chopped walnuts, or raisins for texture

Instructions:

Mix the Dry Ingredients

In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.

Combine Wet Ingredients

In a separate bowl, beat the egg, then stir in the milk, vanilla, and melted butter.

Make the Batter

Pour the wet mixture into the dry ingredients and stir until just combined—don’t overmix. Gently fold in the grated apple.

Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat and add a small amount of butter. Pour ¼ cup of batter per pancake onto the pan. Cook for 2–3 minutes, or until bubbles form and edges look set. Flip and cook another 2 minutes until golden brown.

Serve & Enjoy

Stack your apple pancakes high and top with maple syrup, a pat of butter, apple slices, or a dusting of powdered sugar. Add Greek yogurt or nut butter for extra protein.
