Ingredients for Gatte Ki Sabzi

For the Gatte (Gram Flour Dumplings):

1 cup besan (gram flour)

2 tbsp curd

1 tsp carom seeds (ajwain)

½ tsp turmeric powder

½ tsp red chili powder

Salt to taste

1 tbsp oil

Water (as needed to knead the dough)

For the Gravy:

2 tbsp oil

1 tsp cumin seeds

1 tsp mustard seeds

1 tsp fennel seeds

1 onion (finely chopped)

1 tomato (pureed)

1 tsp ginger-garlic paste

½ tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

½ tsp garam masala

½ cup curd (whisked)

2 cups water

Salt to taste

Fresh coriander for garnishing

Step-by-Step Recipe

Step 1: Prepare the Gatte

In a mixing bowl, combine besan, curd, carom seeds, turmeric powder, red chili powder, garam masala, salt, and oil.

Add water little by little and knead into a stiff dough.

Divide the dough into equal portions and roll them into long cylindrical shapes.

Boil water in a pan and add the rolled dough. Let them cook for 10–12 minutes until they float to the surface.

Remove the gatte from the water, let them cool slightly, and cut them into bite-sized pieces.

Step 2: Prepare the Gravy

Heat oil in a pan and add cumin seeds, mustard seeds, and fennel seeds. Let them crackle.

Add chopped onions and sauté until golden brown.

Add ginger-garlic paste and cook until the raw smell disappears.

Stir in the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates.

Lower the flame and gradually add the whisked curd, stirring continuously to prevent curdling. Add water and bring the gravy to a boil.

Step 3: Combine and Serve

Add the sliced gatte to the simmering gravy and let it cook for 5–7 minutes.

Sprinkle garam masala and garnish with fresh coriander.

Serve hot with roti, paratha, or steamed rice.
