Indulge in the perfect blend of creamy vanilla and fresh blueberry bliss with this easy-to-make Blueberry Vanilla Ice Cream. Rich, smooth, and topped with a luscious blueberry compote, this dessert is sure to become a summer favorite.
Ingredients:
For Vanilla Ice Cream Base:
2 cups heavy cream
1 cup whole milk
¾ cup granulated sugar
1 tablespoon pure vanilla extract
For Blueberry Sauce:
1 cup fresh or frozen blueberries
2 tablespoons sugar
1 tablespoon lemon juice
A pinch of salt
Toppings (optional):
Fresh blueberries
Mint leaves
Powdered sugar
Instructions:
1. Make the Ice Cream Base:
In a large mixing bowl, combine heavy cream, milk, sugar, and vanilla extract. Whisk until the sugar dissolves. Chill the mixture in the refrigerator for 1–2 hours.
2. Prepare Blueberry Sauce:
In a saucepan, add blueberries, sugar, lemon juice, and salt. Simmer over medium heat until the blueberries burst and the sauce thickens slightly (about 7–10 minutes). Let it cool completely.
3. Churn the Ice Cream:
Pour the chilled vanilla mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes).
4. Assemble and Freeze:
Once churned, layer the ice cream with spoonfuls of blueberry sauce in a container. Swirl lightly for a marbled effect or top with a generous drizzle like in the image. Freeze for at least 4 hours or until firm.
5. Serve:
Scoop into bowls, top with fresh blueberries, a sprig of mint, and a dusting of powdered sugar for extra elegance.
