Ingredients:
For the crust:
2 ½ cups all-purpose flour
1 cup (225g) unsalted butter (cold, cut into cubes)
½ tsp salt
6–8 tbsp ice water
For the filling:
5–6 golden apples (peeled, cored, sliced thin)
¾ cup granulated sugar
¼ cup brown sugar
2 tbsp all-purpose flour
1 tsp ground cinnamon
¼ tsp nutmeg
1 tbsp lemon juice
1 tsp vanilla extract
1 tbsp butter (to dot over the filling)
For the glaze:
1 egg (beaten with 1 tbsp water – egg wash)
1 tbsp coarse sugar (optional, for sprinkling)
Instructions:
1. Make the Pie Crust:
Mix flour and salt. Cut in cold butter until the mixture resembles coarse crumbs.
Gradually add ice water until dough holds together.
Divide into 2 discs, wrap in plastic, and chill for at least 1 hour.
2. Prepare the Filling:
In a large bowl, combine sliced apples, sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla.
Toss until apples are well coated. Let sit 15 minutes.
3. Assemble the Pie:
Roll out one dough disc and place in a 9-inch pie dish.
Fill with the apple mixture. Dot with butter.
Roll out second dough and cut into strips for a lattice pattern.
Lay strips in a criss-cross lattice over the pie.
Brush the lattice and crust edge with egg wash. Sprinkle coarse sugar if desired.
4. Bake:
Preheat oven to 200°C (400°F).
Bake for 20 minutes, then reduce to 180°C (350°F) and bake for 30–35 minutes more, until golden and bubbly.
Let cool before serving.
