Start your day with a burst of health and flavor by indulging in Golden Banana Oats Pancakes. These pancakes are not only delicious but also rich in fiber, protein, and essential nutrients, making them a perfect choice for a wholesome breakfast. Naturally sweetened with ripe bananas and packed with the goodness of oats, this recipe is ideal for kids and adults alike.
Ingredients:
2 ripe bananas (mashed)
1 cup rolled oats (blended into flour or use oat flour)
1/2 cup milk (dairy or plant-based)
1 egg (or flax egg for a vegan version)
1/2 tsp baking powder
1/4 tsp cinnamon powder
1/2 tsp vanilla extract (optional)
A pinch of salt
A teaspoon of honey or maple syrup (optional)
Butter or oil for cooking
Instructions:
Prepare the Batter:
In a mixing bowl, mash the ripe bananas until smooth.
Add the oat flour, baking powder, cinnamon, and salt. Mix well.
Stir in the egg, milk, and vanilla extract. Combine until you get a smooth batter. Let it rest for 5–10 minutes to thicken slightly.
Cook the Pancakes:
Heat a non-stick pan or griddle over medium heat and grease it lightly with butter or oil.
Pour a ladleful of batter onto the pan and spread gently into a circle.
Cook until bubbles form on the surface and the edges start to set, then flip and cook the other side until golden brown.
Serve Hot:
Stack the pancakes and drizzle with honey or maple syrup.
Top with fresh fruits, nuts, or a dollop of yogurt for extra flavor and nutrition.
Health Benefits:
Bananas provide natural sweetness, potassium, and energy.
Oats are high in fiber, aiding digestion and keeping you full longer.
Eggs or flax eggs add protein and bind the ingredients.
Tips:
Make mini pancakes for kids’ lunchboxes.
Add chia seeds, chopped nuts, or blueberries for variety.
Use non-dairy milk and a flax egg to make it completely vegan.
