Why Choose a Green Leaves Cake?

Healthy Alternative – It includes nutrient-dense leafy greens that provide vitamins and fiber.

Natural Coloring – No artificial food dyes; the vibrant green comes from fresh leaves.

Unique Flavor – A mild, earthy sweetness that pairs beautifully with vanilla or citrus flavors.

Ingredients

For the Cake:

2 cups fresh spinach or kale (blanched & pureed)

2 cups all-purpose flour (or whole wheat flour)

1 cup sugar (or honey for a natural sweetener)

1/2 cup vegetable oil or butter

3 eggs

1 cup milk (or almond milk for a dairy-free option)

1 tsp baking powder

1/2 tsp baking soda

1 tsp vanilla extract

1/2 tsp salt

For the Frosting (Optional):

1 cup cream cheese or whipped cream

2 tbsp honey or powdered sugar

1 tsp lemon zest

Instructions

Step 1: Prepare the Leafy Green Puree

Blanch the spinach or kale in hot water for 1 minute, then transfer to ice water.

Drain and blend into a smooth puree. Set aside.

Step 2: Make the Cake Batter

Preheat the oven to 175°C (350°F). Grease a cake pan.

In a bowl, whisk together the flour, baking powder, baking soda, and salt.

In another bowl, beat the eggs and sugar until fluffy.

Add the oil, milk, vanilla extract, and green puree, then mix well.

Gradually fold in the dry ingredients until combined.

Step 3: Bake the Cake

Pour the batter into the greased pan.

Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool completely before frosting.

Step 4: Prepare the Frosting (Optional)

Beat the cream cheese, honey, and lemon zest until smooth.

Spread evenly over the cooled cake and garnish with edible flowers or chopped nuts.
