Karela (bitter gourd) may not be everyone’s favorite vegetable due to its bitter taste, but when cooked right, it transforms into a flavorful, healthy dish. This Karela Sabji recipe combines traditional spices to balance out the bitterness, making it an absolute treat for those who appreciate bold flavors.

Ingredients:

  • 3 medium-sized karela (bitter gourds)
  • 1 medium onion, finely chopped
  • 2 tomatoes, chopped
  • 1-2 green chilies, slit (optional)
  • 1 tsp ginger-garlic paste
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp amchur (dry mango powder)
  • 1/2 tsp garam masala (optional)
  • Salt to taste
  • 1 tbsp oil
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the Karela:

    • Wash and peel the bitter gourds. Cut off both ends and slice them into thin rounds or wedges.
    • To reduce the bitterness, sprinkle some salt on the sliced karela and let them sit for 15-20 minutes. Afterward, rinse them thoroughly with water to remove excess bitterness.
  2. Cook the Karela:

    • Heat oil in a pan on medium heat. Once hot, add cumin seeds and let them splutter.
    • Add the chopped onions and sauté until golden brown.
    • Add ginger-garlic paste and green chilies, and cook for another minute.
    • Now, add the chopped tomatoes and cook until they soften and release oil.
  3. Spice it Up:

    • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes until the spices are well blended.
  4. Combine Karela:

    • Add the prepared karela to the pan and stir to coat them with the spice mixture. Cook on low to medium heat, stirring occasionally. Let the karela cook for 15-20 minutes until tender and slightly crispy at the edges. You can cover the pan for quicker cooking.
  5. Final Touch:

    • Add amchur powder and garam masala (if using), mix well, and cook for another 2-3 minutes. Garnish with fresh coriander leaves.
  6. Serve:

    • Your Karela Sabji is ready to be served! Enjoy it with roti, paratha, or even rice.
