Masala Lachha Paratha is a spicy, flaky, multi-layered Indian flatbread that adds a flavorful twist to your regular paratha. Infused with aromatic spices and herbs, this paratha is perfect for breakfast, lunch, or dinner.
Ingredients:
For the Dough:
2 cups whole wheat flour (atta)
1 tbsp oil or ghee
Salt to taste
Water (as needed to knead)
For the Masala Filling:
1 tsp red chili powder
½ tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp chaat masala
½ tsp ajwain (carom seeds)
Salt to taste
2 tbsp finely chopped coriander leaves
1 tbsp ghee (for layering)
Instructions:
Step 1: Prepare the Dough
In a mixing bowl, combine whole wheat flour, salt, and oil.
Gradually add water and knead into a soft, pliable dough.
Cover with a damp cloth and let it rest for 20–30 minutes.
Step 2: Make the Masala Mix
In a bowl, mix all the dry spices and chopped coriander leaves.
Set aside.
Step 3: Roll and Layer
Divide the dough into equal-sized balls.
Roll one ball into a thin roti.
Brush lightly with ghee and sprinkle the masala mix evenly over it.
Pleat the roti like a fan, then roll it into a spiral (like a cinnamon roll).
Flatten gently and roll out again into a thick disc.
Step 4: Cook the Paratha
Heat a tawa (griddle) on medium heat.
Cook the paratha on both sides until golden brown, brushing with ghee or oil.
Press with a spatula to ensure even cooking and crispiness.
Serving Suggestions:
Serve hot with curd, pickle, or any curry of your choice. It’s also delicious with a dollop of butter on top!
