Pav Bhaji is one of India’s most loved street foods. This spicy, buttery vegetable mash served with soft buns (pav) is a delightful treat for any meal or snack.

Ingredients:

2 tablespoons butter

1 tablespoon oil

1 teaspoon cumin seeds

1 large onion, finely chopped

2-3 green chilies, chopped

1 teaspoon ginger-garlic paste

2 large tomatoes, chopped

1 cup boiled and mashed vegetables (potatoes, carrots, peas, capsicum)

1 teaspoon Pav Bhaji masala

½ teaspoon turmeric powder

Salt to taste

1 tablespoon lemon juice

Fresh coriander leaves, chopped for garnish

4-6 pav buns

Extra butter for toasting pav

Instructions:

Prepare the Masala: Heat butter and oil in a pan. Add cumin seeds, onions, and green chilies. Sauté until onions turn golden brown. Add ginger-garlic paste and sauté for another minute.

Cook Tomatoes and Spices: Add chopped tomatoes, turmeric, and Pav Bhaji masala. Cook until tomatoes become soft and mushy.

Add Vegetables: Mix in boiled and mashed vegetables. Stir well and cook for 5-7 minutes, adding a little water if needed. Adjust salt. Mash lightly with a potato masher to get a smooth, thick consistency.

Finish and Garnish: Add lemon juice and garnish with fresh coriander leaves.

 Pav: Slice pav buns horizontally, heat a little butter on a pan, and toast them until golden.

Serve: Serve the hot bhaji with buttered pav, accompanied by chopped onions and lemon wedges.

Tips:

Adjust the spice level according to taste.

Use fresh vegetables for the best flavor and texture.
