Introduction
If you're looking for a showstopper dessert that brings together the richness of Indian flavors and the freshness of seasonal fruits, Rabdi Fruit Custard is just what you need. This indulgent treat marries the creamy, slow-cooked delight of rabdi with the chilled silkiness of fruit custard, topped with a medley of vibrant fruits. It’s perfect for festive feasts, dinner parties, or simply when you want to pamper your taste buds.
Ingredients
For the Rabdi:
1 liter full cream milk
3–4 tbsp sugar (adjust to taste)
1/4 tsp cardamom powder
A few saffron strands (optional)
Chopped nuts (almonds, pistachios) for garnish
For the Custard:
2 cups milk
2 tbsp vanilla custard powder
3 tbsp sugar
For the Fruit Topping:
1 banana (sliced)
1 apple (chopped)
1/2 cup pomegranate pearls
1/2 cup grapes (halved)
1 kiwi or mango (optional, chopped)
You can use any seasonal fruits of your choice.
Method
Step 1: Prepare Rabdi
In a heavy-bottomed pan, boil 1 liter of full cream milk.
Keep stirring and scraping the sides as the milk thickens.
Continue this process until the milk reduces to about 1/3 of its original quantity.
Add sugar, cardamom powder, and saffron strands. Stir well and simmer for another 2-3 minutes.
Let it cool. Refrigerate for at least 30 minutes.
Step 2: Prepare Custard
Mix custard powder in 1/4 cup cold milk without lumps.
Boil the remaining 1 ¾ cup milk in a pan and add sugar.
Slowly add the custard mixture while stirring continuously to avoid lumps.
Cook until it thickens. Remove from heat and let it cool, then refrigerate.
Step 3: Assemble the Rabdi Fruit Custard
In serving glasses or bowls, add a layer of chilled custard.
Add a spoonful of rich rabdi on top.
Top with fresh chopped fruits.
Garnish with chopped nuts and a drizzle of rabdi or saffron strands (optional).
Chill for 1 hour before serving for the best flavor.
Tips
Avoid citrus fruits like oranges and pineapple, which may curdle the custard.
Use chilled rabdi and custard for best results.
Add rose water or kewra essence to the rabdi for a floral twist.
