How to Make Rasmalai Recipe

Step 1: Prepare Chenna

Boil milk and add lemon juice slowly while stirring until the milk separates into curds and whey. Strain the curds using a cloth and wash them with water to remove the sour taste. Hang the cloth for some time to remove excess water.

Step 2: Make Soft Rasmalai Balls

Knead the prepared chenna until it becomes smooth and soft. Divide it into small portions and shape them into flat round discs.

Step 3: Cook the Rasmalai

Prepare sugar syrup by boiling sugar and water together. Add the chenna discs and cook until they become soft and increase in size.

Step 4: Prepare Creamy Milk

Boil milk on low flame until it reduces slightly and becomes creamy. Add sugar, saffron, cardamom powder, pistachios, and almonds for a rich flavor.

Step 5: Combine and Serve

Gently squeeze the cooked rasmalai pieces and place them into the prepared sweet milk. Refrigerate for a few hours before serving for the best taste.
