Badam Barfi is a popular Indian sweet loved for its rich almond flavour, soft texture and delicate aroma of cardamom. Made with simple ingredients such as almonds, sugar, ghee and milk, this traditional mithai is an excellent choice for festivals, family celebrations and special occasions.
Homemade Badam Barfi is also a wonderful alternative to store-bought sweets. The recipe is easy to follow, and with the right cooking consistency, you can prepare perfectly set pieces with a delicious nutty taste.
Badam Barfi Recipe
Ingredients
1 cup almonds (badam)
½ cup sugar
¼ cup milk
2 tablespoons ghee
½ teaspoon cardamom powder
1 tablespoon finely chopped pistachios or almonds
A few saffron strands, optional
Method
Step 1: Soak and peel the almonds
Soak the almonds in warm water for around 4–5 hours or overnight. Drain the water, peel the almonds and pat them dry.
Step 2: Prepare the almond paste
Put the peeled almonds into a blender. Add the milk and grind until you get a smooth, thick paste. Avoid adding too much milk, as a thinner mixture will require more cooking.
Step 3: Cook the almond mixture
Heat 1 tablespoon of ghee in a heavy-bottomed pan. Add the almond paste and cook over low to medium heat. Keep stirring continuously to prevent the mixture from sticking to the bottom.
Step 4: Add sugar
Once the almond mixture is cooked and its raw smell has disappeared, add the sugar. Mix well and continue cooking while stirring regularly.
Step 5: Add ghee and flavouring
Add the remaining ghee and cardamom powder. You can also add a few saffron strands for extra aroma and colour. Continue cooking until the mixture becomes thick and starts leaving the sides of the pan.
Step 6: Set the barfi
Grease a plate or tray with a little ghee. Transfer the hot mixture onto it and spread it evenly using a greased spatula.
Step 7: Garnish and cut
Sprinkle chopped pistachios or almonds on top and gently press them into the surface. Let the barfi cool completely before cutting it into squares or diamond-shaped pieces.
Tips for Perfect Badam Barfi
Cook the almond mixture on low to medium heat to prevent it from sticking or burning.
Do not add excessive milk while grinding the almonds.
The mixture should become thick enough to leave the sides of the pan before setting.
For a richer taste, you can add a little extra ghee.
Store the barfi in an airtight container in the refrigerator and consume within a few days.
