Ingredients:
1 cup heavy cream
½ cup sweetened condensed milk
1 tsp vanilla extract
½ tsp peppermint extract (adjust to taste)
2 tbsp chopped fresh mint leaves
2 tbsp mini chocolate chips or chocolate shavings
Green food coloring (optional, for minty look)
Crushed Oreos or cookies (optional, for extra crunch)
Tools You’ll Need:
A metal baking tray or flat freezer-safe pan
Spatula or metal scraper
Freezer
Mixing bowl and whisk
Instructions:
Prepare Ice Cream Base:
In a bowl, whisk together heavy cream, sweetened condensed milk, vanilla, and peppermint extract until smooth.
Add green food coloring if desired and stir in chopped mint leaves and chocolate chips.
Freeze the Base:
Pour the mixture into the metal tray in a thin, even layer (around ¼ inch thick).
Freeze flat for at least 4–5 hours or until fully solid.
Roll the Ice Cream:
Once frozen, take the tray out and let it sit for about 2 minutes at room temperature.
Use a metal spatula or scraper to push and roll the ice cream into tight rolls.
Serve:
Place the rolls into a serving cup or bowl.
Garnish with fresh mint leaves, extra chocolate chips, or crushed cookies.
Drizzle with chocolate syrup or caramel if desired.
