Sabudana Khichdi is a popular Indian dish, especially consumed during fasting (vrat) on occasions like Maha Shivratri, Navratri, and Ekadashi. This light yet flavorful dish is made with soaked sabudana (sago pearls), peanuts, and mild spices, making it an energy-rich meal.
Ingredients:
1 cup sabudana (sago pearls)
2 tbsp ghee or peanut oil
1 tsp cumin seeds (jeera)
1 green chili (chopped)
1 boiled potato (cubed)
¼ cup roasted peanuts (crushed)
½ tsp rock salt (sendha namak)
½ tsp black pepper powder
1 tbsp chopped coriander leaves
1 tbsp lemon juice
Instructions:
Soak the Sabudana: Rinse sabudana thoroughly and soak it in water for 4-5 hours or overnight. Drain excess water and keep it dry.
Prepare the Khichdi:
Heat ghee in a pan, add cumin seeds and chopped green chili. Sauté for a few seconds.
Add boiled potato cubes and cook for a minute.
Add soaked sabudana, rock salt, black pepper powder, and crushed peanuts. Mix well and cook on low heat for 5 minutes, stirring occasionally.
Garnish & Serve: Turn off the heat and add chopped coriander leaves and lemon juice. Mix well and serve hot.

Ensure sabudana is well-soaked and dry before cooking to avoid stickiness.
