Shabudana Khichadi is a traditional Maharashtrian dish, especially popular during fasting days (Navratri). Made from soaked sabudana (tapioca pearls), it is light, nutritious, and full of flavor.
Ingredients:
1 cup sabudana (soaked for 4-5 hours)
2 medium-sized potatoes (boiled and diced)
2 tablespoons peanuts (roasted and coarsely ground)
2 green chilies (finely chopped)
1 teaspoon cumin seeds
1 tablespoon ghee or oil
Salt to taste
Fresh coriander leaves for garnish
Lemon wedges for serving
Instructions:
Soak the Sabudana: Rinse the sabudana under cold water and soak it for 4-5 hours until soft. Drain any excess water.
Prepare the Peanuts: Roast the peanuts until golden, then crush them coarsely.
Cook the Khichadi: Heat ghee in a pan, add cumin seeds and chopped green chilies. Add diced potatoes and sauté for 2-3 minutes.
Add Sabudana: Mix in the soaked sabudana and peanuts. Stir gently to combine.
Season and Cook: Add salt and cook on low heat for 5-7 minutes, stirring occasionally until the khichadi is soft and slightly translucent.
Garnish and Serve: Sprinkle chopped coriander leaves and serve hot with lemon wedges.
Tips:
Make sure sabudana is well-soaked; it should not be hard in the center.
Adjust green chilies and lemon according to taste for extra zest.
Serve immediately to enjoy the perfect texture.
