Sheer Khurma, a traditional dessert prepared during Eid, is a rich and creamy vermicelli pudding that holds a special place in festive celebrations. The name "Sheer Khurma" translates to "milk with dates" in Persian, and it is a delicacy that originated in the Mughal era, later becoming a staple in Indian, Pakistani, and Afghan cuisines.


Ingredients:

1-liter full cream milk

100g fine vermicelli (seviyan)

½ cup sugar (adjust to taste)

8-10 dates (chopped)

10-12 almonds (sliced)

10-12 cashews (chopped)

10-12 pistachios (chopped)

3-4 cardamom pods (crushed)

2 tbsp ghee

1 tbsp chironji (optional)

¼ cup raisins

A pinch of saffron (optional)

½ tsp rose water (optional)


Method:

Roast the Vermicelli: In a heavy-bottomed pan, heat ghee and roast the vermicelli until golden brown. Remove and set aside.

Fry the Nuts & Dry Fruits: In the same pan, add a little more ghee and sauté the almonds, cashews, pistachios, dates, raisins, and chironji until aromatic.

Simmer the Milk: In another deep pan, bring the milk to a boil, then lower the flame and let it simmer for 10-15 minutes until slightly thickened.

Combine Ingredients: Add the roasted vermicelli, nuts, cardamom, and saffron to the milk. Cook on low heat until the vermicelli softens.

Sweeten & Flavor: Stir in sugar and let it dissolve completely. Add rose water for an aromatic touch.

Serve: Sheer Khurma can be enjoyed warm or chilled, garnished with extra nuts and saffron strands.

Serving Suggestions:

This delectable dessert is often served in small bowls or glasses, making it a visually appealing and indulgent treat for guests. Some variations include adding coconut, khoya, or condensed milk for extra richness.
