1. Gulab Jamun

Ingredients:

1 cup khoya (dried whole milk)

1/4 cup all-purpose flour

1/2 teaspoon baking soda

2 cups sugar

1 cup water

1/2 teaspoon cardamom powder

Ghee or oil for frying

Instructions:

Make the Dough: Mix khoya, all-purpose flour, and baking soda in a bowl. Knead until smooth. If the dough is too dry, add a little milk.

Shape the Balls: Divide the dough into small portions and roll into smooth balls.

Prepare Sugar Syrup: In a pan, combine sugar and water. Boil until the sugar dissolves. Add cardamom powder and let it simmer.

Fry the Balls: Heat ghee or oil in a deep pan. Fry the balls on low heat until golden brown.

Soak in Syrup: Remove the fried balls and soak them in the sugar syrup for at least 30 minutes before serving.

2. Ladoo (Besan Ladoo)

Ingredients:

1 cup besan (gram flour)

1/2 cup ghee

3/4 cup powdered sugar

1/4 teaspoon cardamom powder

Chopped nuts (almonds, cashews) for garnish

Instructions:

Roast the Besan: In a pan, heat ghee and add besan. Roast on low heat until it turns golden and aromatic.

Add Sugar and Cardamom: Once roasted, let it cool slightly. Mix in the powdered sugar and cardamom powder.

Shape into Ladoos: Once the mixture is cool enough to handle, shape it into small balls (ladoos).

Garnish: Place chopped nuts on top of each ladoo and let them cool completely.

3. Kaju Katli (Cashew Fudge)

Ingredients:

1 cup cashews (soaked and drained)

1/2 cup sugar

1/4 cup water

1/4 teaspoon cardamom powder

Silver leaf (optional) for decoration

Instructions:

Make Cashew Powder: Grind soaked cashews to a fine powder.

Prepare Sugar Syrup: In a pan, dissolve sugar in water and bring it to a single thread consistency.

Combine: Add cashew powder and cardamom powder to the syrup. Cook until the mixture thickens and leaves the sides of the pan.

Roll Out: Transfer to a greased plate and roll out into a thin layer. Cut into diamond shapes and garnish with silver leaf if desired.

4. Rasgulla

Ingredients:

1 liter full-fat milk

1/4 cup lemon juice

1 cup sugar

4 cups water

1/2 teaspoon cardamom powder

Instructions:

Make Chhena: Boil milk and add lemon juice to curdle it. Drain the curds using a muslin cloth and rinse with cold water. Squeeze out excess water.

Knead Chhena: Knead the chhena until smooth and form small balls.

Prepare Syrup: In a pan, boil sugar and water to make a syrup. Add cardamom powder.

Cook Rasgullas: Drop the chhena balls into the boiling syrup and cook until they double in size.

Cool and Serve: Let them cool in the syrup and serve chilled.

5. Barfi

Ingredients:

1 cup grated coconut (or khoya)

1/2 cup sugar

1/4 cup milk

1/4 teaspoon cardamom powder

Chopped nuts for garnish

Instructions:

Cook the Mixture: In a pan, combine grated coconut, sugar, and milk. Cook until the mixture thickens.

Add Flavor: Stir in cardamom powder and cook for another 2-3 minutes.

Set the Mixture: Transfer to a greased plate and spread evenly. Garnish with chopped nuts.

Cut into Pieces: Allow it to cool, then cut into squares or diamonds.
