Ingredients
For the Filling:
1 cup paneer (cottage cheese), cut into strips
1 cup assorted vegetables, thinly sliced (e.g., carrots, capsicum, cabbage, onions)
1 tbsp oil or butter
Salt and pepper to taste
½ tsp paprika or red chili powder
½ tsp cumin powder
½ tsp garam masala
½ tsp lemon juice
For the Garlic Sauce (or Yogurt Sauce):
½ cup Greek yogurt or hung curd
2–3 garlic cloves, finely minced
1 tbsp lemon juice
1 tbsp mayonnaise (optional, for creaminess)
Salt to taste
A pinch of black pepper
To Serve:
3–4 pita breads or Lebanese flatbreads
Pickled vegetables or cucumber sticks
Lettuce or shredded cabbage
Hot sauce (optional)
Instructions
1. Prepare the Garlic Yogurt Sauce
Mix all ingredients in a bowl.
Keep it chilled for at least 10 minutes for flavors to combine.
2. Sauté the Veggies and Paneer
Heat oil in a pan. Add sliced onions, carrots, and capsicum.
Stir-fry for 2–3 minutes, then add paneer strips.
Add spices: chili, cumin, garam masala, salt, and pepper.
Toss everything well and cook for another 3–4 minutes until slightly crisp.
Squeeze in lemon juice and remove from heat.
3. Assemble the Wraps
Warm the pita or flatbread.
Spread garlic sauce generously.
Add lettuce or cabbage.
Top with the sautéed paneer-veg mixture.
Add pickles or cucumber slices.
Drizzle more garlic sauce or hot sauce.
Roll the wrap tightly.
Optional Add-Ons
Hummus or tahini for extra flavor
Falafel instead of paneer for a high-protein version
Sprinkle of za’atar or sumac
