Ingredients:
2 cups full-fat coconut milk (or oat milk for a lighter version)
1½ tsp agar-agar powder (not flakes)
4 tbsp maple syrup (or agave syrup)
1 tsp ground cinnamon
1 tsp vanilla extract
Pinch of salt
Optional Toppings:
Caramelized apple slices or poached pears
Crushed nuts (almonds, pistachios)
Ground cinnamon dusting
Coconut whipped cream
Instructions:
Prepare the mold:
Lightly grease 4 ramekins or serving cups with neutral oil (optional, for easy unmolding).
Mix ingredients:
In a saucepan, combine coconut milk, maple syrup, cinnamon, vanilla, and salt. Whisk well.
Add agar-agar:
Sprinkle the agar-agar powder over the mixture. Stir continuously to dissolve it completely.
Heat the mixture:
Bring to a gentle boil over medium heat. Simmer for 2-3 minutes while stirring—this activates the agar-agar.
Pour & chill:
Pour the hot mixture into molds. Let cool for 10 minutes at room temperature, then refrigerate for at least 3-4 hours until set.
Serve:
Run a knife along the edges to demold, or serve in the cups. Add your favorite toppings.
