Ingredients

For Dal Pakode:

1 cup split yellow moong dal (or chana dal)

1 green chili (finely chopped)

1-inch ginger (grated)

2 tbsp coriander leaves (chopped)

Salt to taste

Oil for deep frying

For Chaat Toppings:

½ cup whisked curd (yogurt)

2 tbsp green chutney (mint-coriander)

2 tbsp tamarind chutney

1 small onion (finely chopped)

1 small tomato (finely chopped)

Fresh coriander leaves (chopped)

Sev (crispy gram flour noodles)

Chaat masala and roasted cumin powder

Method

1. Prepare Dal Pakode:

Soak the moong dal for 3–4 hours. Drain and grind coarsely (do not add water).

Mix in chopped chili, ginger, coriander, and salt.

Heat oil in a pan. Drop spoonfuls of the mixture and deep-fry till golden brown and crispy.

Drain on paper towels. Keep warm.

2. Assemble the Chaat:

In a plate or shallow bowl, place 4–5 warm dal pakoras.

Drizzle whisked yogurt generously over them.

Add green chutney and tamarind chutney to taste.

Sprinkle chopped onions, tomatoes, fresh coriander, and sev.

Finish with a pinch of chaat masala and roasted cumin powder.
