Introduction:

Hara Bhara Kabab is a popular North Indian vegetarian appetizer made with spinach, green peas, potatoes, and aromatic spices. Not only is it flavorful, but it's also a healthy option for those looking to enjoy something tasty without compromising on nutrition. The name "Hara Bhara" literally means "full of greens," which reflects its vibrant green color and nutritious ingredients.

Ingredients:

Spinach (Palak) – 2 cups (blanched and chopped)

Green peas – 1 cup (boiled)

Potatoes – 2 medium-sized (boiled and mashed)

Ginger – 1 tsp (grated)

Green chilies – 2 (finely chopped)

Coriander leaves – 2 tbsp (chopped)

Chaat masala – 1 tsp

Garam masala – ½ tsp

Roasted gram flour (besan) – 2-3 tbsp (for binding)

Salt – to taste

Oil – for shallow frying

Cashew nuts – 10-12 (optional, for garnish)

Instructions:

Prep the Greens:

Blanch spinach leaves in hot water for 2-3 minutes, then immediately transfer to cold water to retain color. Drain and finely chop.

Mix the Base:

In a mixing bowl, mash the boiled green peas and potatoes together. Add chopped spinach, green chilies, ginger, coriander, chaat masala, garam masala, salt, and gram flour. Mix well to form a soft dough.

Shape the Kababs:

Divide the mixture into equal portions and shape them into round patties or oval kababs. If using, press a cashew nut in the center of each kabab for added crunch and appearance.

Cooking:

Heat oil in a non-stick pan. Shallow fry the kababs on medium heat until both sides are golden brown and crispy.

Serving:

Serve hot with mint chutney, tamarind chutney, or ketchup. They also pair well with a cup of masala chai.

Tips:

To make them healthier, you can air-fry or bake the kababs instead of shallow frying.

Ensure there is no excess moisture in the mixture to keep the kababs from breaking while frying.

You can add grated paneer for added protein and richness.
