Here's a delicious recipe for Paneer Bhaji, a flavorful Indian dish that's perfect for serving with bread or rice. This recipe combines paneer (Indian cottage cheese) with a variety of spices and vegetables, creating a rich and satisfying dish.
Paneer Bhaji Recipe
Ingredients
For the Bhaji:
200 grams paneer (cottage cheese), cubed
2 tablespoons oil (preferably vegetable or mustard oil)
1 teaspoon cumin seeds
1 onion, finely chopped
1-2 green chilies, slit (adjust to taste)
1 tablespoon ginger-garlic paste
2 tomatoes, pureed
1 bell pepper (capsicum), finely chopped
1-2 carrots, finely chopped (optional)
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves, chopped (for garnish)
For Serving:
Pav (bread rolls) or chapati
Lemon wedges (optional)
Instructions
Prepare the Paneer:
If the paneer is refrigerated, soak it in hot water for about 15-20 minutes to soften it. Drain and set aside.
Cook the Bhaji:
In a pan, heat the oil over medium heat. Add cumin seeds and let them splutter.
Add the chopped onions and green chilies. Sauté until the onions turn translucent.
Stir in the ginger-garlic paste and sauté for another minute until the raw smell disappears.
Add the tomato puree and cook until the oil separates from the mixture (about 5-7 minutes).
Stir in the chopped bell pepper and carrots (if using). Cook for another 3-4 minutes until the vegetables soften.
Add turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
Add the cubed paneer and gently mix to coat the paneer with the spices. Cook for another 5 minutes, stirring occasionally.
Sprinkle garam masala over the bhaji and mix well. Cook for an additional minute.
Garnish and Serve:
Remove from heat and garnish with fresh coriander leaves.
Serve hot with pav (bread rolls) or chapati. You can also serve it with lemon wedges for an extra zing.
Tips
For a richer flavor, you can add a tablespoon of cream or butter at the end of cooking.
You can customize the vegetables based on your preference. Peas, corn, or beans can be excellent additions.
Serve with a side of green chutney or pickles for added flavor.
