1/2 tsp turmeric powder
1 tsp red chili powder

Fresh coriander leaves, chopped (for garnish)
1 tsp lemon juice (for tang)
Step-by-Step Cooking:
1. Heat the Base
In a pan, heat oil and add cumin seeds and bay leaf. Once aromatic, add the chopped onions. Sauté until golden brown.
2. Build the Masala
Add ginger, garlic, and green chili. Sauté for 1–2 minutes. Then stir in turmeric, chili powder, and coriander powder. Cook for 30 seconds.
3. Add Tomatoes
Pour in the tomato puree. Cook until the mixture reduces and oil begins to separate, intensifying the flavor.
4. Chickpea Time
Add the boiled chickpeas along with a little water (about 1/2 cup). Mix well so the masala coats the chickpeas. Simmer for 10–15 minutes.
5. Finish with Flavor
Sprinkle garam masala and chana masala powder. Mix and cook for another 2–3 minutes. Adjust salt and consistency as desired.
6. Garnish & Serve
Turn off the heat, squeeze some lemon juice, and top with chopped coriander.
