Classic Recipe
Want to make it at home? Here’s a simplified version:
Ingredients:
1 cup gram flour (besan)
1 tbsp semolina (optional, for texture)
1 tsp lemon juice
1 tsp sugar
Salt to taste
1 tsp Eno fruit salt (or baking soda)
1/2 cup water
Tempering:
1 tbsp oil
1 tsp mustard seeds
Curry leaves
2 chopped green chilies
A pinch of asafoetida (hing)
Steps:
Mix besan, semolina, lemon juice, sugar, salt, and water into a smooth batter.
Just before steaming, add Eno and mix gently.
Pour into a greased plate or thali, steam for 15–20 mins.
Temper with mustard seeds, curry leaves, and green chilies. Pour over steamed dhokla.
Garnish with coriander and grated coconut (optional).
Serving Suggestion
Serve with green chutney or sweet tamarind chutney. Pair with masala chai for an authentic Gujarati experience.
