Ingredients

For the Paratha:

2 cups whole wheat flour

1/2 cup all-purpose flour (optional for softness)

1/2 tsp salt

Water as needed

2 tbsp oil or ghee

For the Chicken Filling:

200g boneless chicken, cut into small pieces

2 tbsp oil

1 onion, finely chopped

1 tomato, finely chopped

1 tsp ginger-garlic paste

1/2 tsp turmeric powder

1 tsp red chili powder

1/2 tsp garam masala

1/2 tsp cumin powder

Salt to taste

Fresh coriander leaves, chopped

For the Vegetarian Filling:

200g paneer or boiled potatoes, crumbled

2 tbsp oil

1 onion, finely chopped

1 tomato, finely chopped

1/2 tsp turmeric powder

1 tsp red chili powder

1/2 tsp garam masala

1/2 tsp cumin powder

Salt to taste

Fresh coriander leaves, chopped

For Assembly:

Sliced onions

Shredded cabbage or lettuce

Green chutney

Tomato ketchup or mayo

Chaat masala (optional)

Instructions

Step 1: Prepare the Paratha

In a mixing bowl, combine the flours and salt.

Add water gradually, kneading into a soft dough. Rest for 20 minutes.

Roll the dough into medium-sized parathas and cook them on a hot tawa with a drizzle of oil until lightly golden on both sides. Set aside.

Step 2: Make the Chicken Filling

Heat oil in a pan and sauté onions until translucent.

Add ginger-garlic paste and cook until aromatic.

Mix in tomatoes and spices (turmeric, chili powder, garam masala, cumin).

Add chicken pieces and cook until tender. Adjust salt.

Garnish with fresh coriander leaves.

Step 3: Make the Vegetarian Filling

Heat oil in a pan and sauté onions until translucent.

Add ginger-garlic paste (if desired) and cook briefly.

Mix in tomatoes and spices (turmeric, chili powder, garam masala, cumin).

Add crumbled paneer or boiled potatoes and cook until combined. Adjust salt.

Garnish with fresh coriander leaves.

Step 4: Assemble the Franky

Place a paratha on a clean surface.

Spread green chutney and ketchup/mayo over it.

Add a generous portion of the chicken or vegetarian filling in the center.

Top with sliced onions, shredded cabbage, and a sprinkle of chaat masala.

Roll the paratha tightly to form the Franky. Secure with foil or paper if needed.
