Ingredients (Makes about 12 Madeleines)
2 large eggs
½ cup (100g) granulated sugar
1 tsp vanilla extract
1 tsp lemon zest (optional, for a citrus twist)
¾ cup (95g) all-purpose flour
½ tsp baking powder
1/4 tsp salt
½ cup (113g) unsalted butter, melted and cooled
Powdered sugar, for dusting
Instructions
Prepare the Batter:
In a bowl, beat eggs and sugar until pale and thick (about 3-5 minutes).
Stir in vanilla extract and lemon zest.
Sift Dry Ingredients:
Sift together flour, baking powder, and salt.
Gently fold into the egg mixture until just combined.
Add Butter:
Slowly add the melted butter, folding gently until incorporated.
Cover and refrigerate the batter for 1 hour (important for the hump!).
Bake:
Preheat oven to 375°F (190°C).
Grease and flour a madeleine pan.
Spoon batter into each mold, filling about ¾ full.
Bake for 10–12 minutes, until the edges are golden brown and centers are puffed.
Cool & Serve:
Cool for 5 minutes, then gently remove from the pan.
Dust with powdered sugar and serve on an elegant plate for that refined finish.
Serving Suggestions
Pair with Earl Grey tea or espresso.
Serve with a berry compote or whipped cream for a dessert platter.
Plate on fine china or a glass tray with gold accents for a luxurious touch.
