How to Make Malai Rabri
Step 1: Boil the Milk
Pour the full-fat milk into a wide, heavy-bottomed pan and bring it to a boil over medium heat.
Step 2: Collect the Malai
As the milk simmers, a layer of cream (malai) forms on the surface. Gently push this cream to the sides of the pan without mixing it back into the milk.
Step 3: Reduce the Milk
Continue simmering the milk for 45–60 minutes, stirring occasionally to prevent sticking. Allow the milk to reduce to about one-third of its original quantity.
Step 4: Add Sugar and Flavoring
Mix in the sugar, cardamom powder, and saffron strands. Stir until the sugar dissolves completely.
Step 5: Mix the Malai
Scrape the cream collected on the sides back into the thickened milk. Stir gently to keep the delicious layers intact.
Step 6: Garnish
Add chopped almonds, pistachios, and cashews. Mix lightly and turn off the heat.
Step 7: Chill and Serve
Let the Rabri cool completely, then refrigerate for 2–3 hours. Serve chilled, garnished with extra nuts and a few saffron strands.
