For the best flavour and colour, use a sweet, non-fibrous mango variety. Alphonso mangoes work particularly well for this recipe. Canned mango pulp can also be used when fresh mangoes are unavailable.
How to Make Mango Modak
Step 1: Prepare the Mango Pulp
Peel the ripe mangoes and remove the seeds. Chop the mango flesh into small pieces and blend until smooth.
If using ready-made mango pulp, you can directly use it in the recipe.
Step 2: Prepare the Saffron
Warm one tablespoon of milk and add the saffron strands. Keep it aside for a few minutes so the saffron releases its colour and aroma.
Step 3: Cook the Mango Mixture
Heat a thick-bottomed non-stick pan and add the mango pulp.

Transfer the cooked mixture to a plate or bowl and allow it to cool until it becomes warm enough to handle.
The mixture should be firm enough to hold its shape but still soft.
Step 7: Shape the Modaks
Grease a modak mould lightly with ghee.
Fill the mould with the mango-khoya mixture and press gently so that the mixture takes the shape of the mould.
Open the mould carefully and remove the prepared modak.
If you do not have a mould, you can shape the mixture into small peda-like sweets by hand.
Step 8: Garnish
Decorate the mango modaks with chopped pistachios and a few saffron strands.
