2 large potatoes, boiled and mashed

1/2 cup boiled chickpeas

1 tablespoon chaat masala

1 teaspoon red chili powder

Salt to taste

For the Pani (flavored water):

1/2 cup fresh coriander leaves

1/4 cup fresh mint leaves

1 tablespoon tamarind paste

1-2 green chilies (adjust to taste)

1 teaspoon cumin powder

1 teaspoon black salt

1 tablespoon lemon juice

Water (chilled or at room temperature)

Instructions:

Prepare the Puri:

Mix semolina, all-purpose flour, and baking soda in a bowl. Gradually add water and knead into a smooth, stiff dough.

Roll the dough into small balls and flatten them into thin discs.

Heat oil in a pan and fry the discs until they puff up and turn golden brown. Once cooled, set them aside.

Prepare the Filling:

Mix the mashed potatoes with boiled chickpeas, chaat masala, chili powder, and salt. This will be the filling for your puris.

Prepare the Pani:

Blend fresh coriander, mint leaves, green chilies, cumin powder, black salt, tamarind paste, and lemon juice into a smooth paste.

Add water to the mixture to reach your desired consistency and chill the pani in the refrigerator for an hour.

Assemble Pani Puri:

Carefully crack open each puri and stuff it with the potato-chickpea mixture.

Dip the stuffed puris into the chilled, spicy pani and serve immediately.
