asmalai — soft, spongy cottage cheese discs soaked in fragrant, saffron-infused milk — is a classic Indian dessert that combines richness, elegance, and indulgence in every bite. Often served during festivals and celebrations, Rasmalai is a showstopper that’s surprisingly easy to make at home.
Ingredients
For the Rasgullas (cheese balls):
1 liter full-fat milk
2 tbsp lemon juice (mixed with 2 tbsp water)
1 cup sugar
4 cups water
Few ice cubes
For the flavored milk (Ras):
1/2 liter full-fat milk
4 tbsp sugar (adjust to taste)
6-7 saffron strands
4-5 green cardamom pods (crushed)
8-10 pistachios and almonds (slivered)
Method
Step 1: Make Chenna (Cottage Cheese)
Boil 1 liter of milk in a heavy-bottomed pan.
Once it starts boiling, lower the flame and slowly add the lemon juice mix while stirring.
The milk will curdle. Turn off the flame.
Strain the curdled milk in a muslin cloth and rinse under cold water to remove lemony taste.
Squeeze gently and hang the cloth for 30 mins to drain excess water.
Step 2: Prepare Rasgullas
Knead the chenna until smooth (around 10 mins).
Make small smooth balls and flatten them slightly.
In a wide pan, boil 1 cup sugar in 4 cups water.
Add the discs gently. Cover and cook for 15-18 mins on high heat. They will puff up.
Transfer them to cold water and let them cool.
Step 3: Make Flavored Milk
Boil 1/2 liter milk and reduce it to 2/3rd.
Add sugar, saffron, cardamom, and slivered nuts. Simmer for 5 mins. Let it cool slightly.
Step 4: Combine and Chill
Gently squeeze the cooked discs and drop them into the flavored milk.
Chill for at least 3–4 hours or overnight. Garnish with more nuts and saffron before serving.
Tips for Perfect Rasmalai:
Always use full-fat milk for rich and creamy results.
Kneading the chenna well is the secret to soft and spongy rasgullas.
Don’t skip the chilling — rasmalai tastes best cold!
Serving Suggestion:
Serve chilled in a bowl, garnished with saffron threads and pistachio slivers. Rasmalai makes a perfect end to any festive meal or dinner party.
