Gajar Kheer is a delicious Indian dessert made with fresh grated carrots, full-fat milk, sugar, and aromatic cardamom. Unlike Gajar Halwa, this dessert has a rich, creamy texture that makes it perfect for festivals, family gatherings, and special occasions. Packed with the natural sweetness of carrots and the goodness of milk, Gajar Kheer is both comforting and nutritious. It can be served warm during winters or chilled in summers for a refreshing treat.
Ingredients
4 cups full-fat milk
2 cups grated fresh carrots
¼ cup basmati rice (washed and soaked for 20 minutes)
½ cup sugar (adjust to taste)
2 tablespoons chopped almonds
2 tablespoons chopped cashews
1 tablespoon chopped pistachios
½ teaspoon cardamom powder
8–10 raisins
1 tablespoon ghee
A few saffron strands (optional)
Instructions
Step 1: Roast the Carrots
Heat ghee in a heavy-bottomed pan. Add the grated carrots and sauté for 5–6 minutes until the raw aroma disappears.
Step 2: Cook the Rice
In another large pan, bring the milk to a gentle boil. Add the soaked rice and cook on low heat for about 20–25 minutes, stirring occasionally until the rice becomes soft.
Step 3: Add Carrots
Mix the sautéed carrots into the cooked milk and rice mixture. Continue cooking for another 10–15 minutes until the carrots become tender and blend well with the milk.
Step 4: Sweeten the Kheer
Add sugar and stir until completely dissolved. Let the kheer simmer for another 5 minutes.
Step 5: Flavor and Garnish
Add cardamom powder, saffron strands, raisins, almonds, cashews, and pistachios. Mix well and cook for 2–3 more minutes.
Step 6: Serve
Serve the Gajar Kheer warm for a comforting winter dessert or refrigerate for a few hours and enjoy it chilled.

Full-fat milk gives the kheer a rich and creamy consistency.
