Milk Kova, also known as Mawa or Khoya, is a rich and creamy milk-based ingredient widely used in Indian sweets. It is prepared by slowly reducing full-fat milk until most of the water evaporates, leaving behind a thick, creamy and slightly grainy mixture.
Homemade Milk Kova is fresh, flavorful and ideal for preparing traditional sweets such as Gulab Jamun, Peda, Barfi, Kalakand, Gujiya and many festive desserts. Although making kova requires patience, the process is simple and uses only one main ingredient—full-fat milk.
Ingredients
1 litre full-fat milk
1 teaspoon ghee (optional, for greasing the pan)
1–2 teaspoons sugar (optional, if you want mildly sweet kova)
Method
Boil the Milk
Take a heavy-bottomed, wide pan and pour in the full-fat milk. Bring it to a boil over medium heat.
Reduce the Milk
Once the milk starts boiling, reduce the flame to low. Continue cooking while stirring frequently. Scrape the milk solids that stick to the sides of the pan and mix them back into the milk.
Keep Stirring
As the milk gradually thickens, stir continuously or very frequently to prevent burning. A wide pan helps the milk reduce faster.
Cook Until Thick
Continue cooking until the milk becomes very thick and loses most of its moisture. The mixture will gradually turn creamy, thick and slightly grainy.
Final Stage
When the mixture starts leaving the sides and bottom of the pan, cook for another 2–3 minutes on very low heat. Turn off the flame.
Cool the Kova
Transfer the Milk Kova to a clean plate or bowl and allow it to cool completely. It will become firmer as it cools.
Tips for Perfect Milk Kova
Always use full-fat milk for rich and creamy kova.
A heavy-bottomed pan helps prevent the milk from burning.
Stir regularly, especially during the final stage.
Keep the flame low once the milk starts reducing.
Do not add sugar if you are planning to use the kova for sweets that already contain sugar.
For a richer texture, you can add a small amount of ghee at the end.
How to Store Milk Kova
Allow homemade kova to cool completely before storing it in an airtight container. It can be refrigerated and used within a few days. For longer storage, it can be frozen and thawed before use.
