Mishti Doi is a traditional Bengali sweet made with thickened milk, caramelised sugar and yogurt. Famous for its smooth, creamy texture and mildly tangy flavour, this classic dessert is enjoyed across Bengal and other parts of India.
The word “Mishti” means sweet, while “Doi” means yogurt. Traditionally, Mishti Doi is prepared in small earthen pots called bhar. The porous clay pots absorb excess moisture from the yogurt and give the dessert its distinctive texture and earthy aroma.
Mishti Doi is particularly popular during festivals, weddings, family celebrations and special occasions. It can also be prepared easily at home with just a few basic ingredients.
Mishti Doi Recipe
Ingredients
1 litre full-fat milk
4–5 tablespoons sugar
2 tablespoons fresh thick curd
1–2 tablespoons jaggery, optional
1 teaspoon cardamom powder, optional
Chopped pistachios or almonds for garnish, optional
Method
Reduce the milk:
Pour the full-fat milk into a heavy-bottomed pan. Bring it to a boil and then simmer on low heat. Stir occasionally to prevent the milk from sticking to the bottom. Continue cooking until the milk reduces to around 700–750 ml and becomes slightly thick.
Caramelise the sugar:
Heat sugar in a separate pan over low heat. Allow it to melt slowly until it turns golden brown. Be careful not to burn it.
Combine the milk and caramel:
Add a little warm milk to the caramelised sugar and stir carefully. Once the caramel dissolves, add this mixture to the remaining reduced milk. Mix thoroughly.
Cool the milk:
Allow the sweetened milk to cool until it is lukewarm. It should not be hot, as excessive heat can kill the beneficial bacteria in the curd.
Add the curd:
Whisk the fresh curd until smooth and add it to the lukewarm milk. Mix gently until everything is well combined.
Set the Mishti Doi:
Pour the mixture into earthen pots or small bowls. Cover and keep them in a warm place for approximately 6–10 hours, or until the yogurt is firmly set.
Chill and serve:
Once set, refrigerate the Mishti Doi for at least 2–3 hours. Serve chilled and garnish with chopped pistachios or almonds if desired.
Tips for Perfect Mishti Doi
Always use full-fat milk for a rich and creamy texture.
Reduce the milk properly for thicker Mishti Doi.
Do not add curd while the milk is very hot.
Fresh curd with live cultures helps the dessert set properly.
Traditional earthen pots provide excellent results.
Refrigerate the dessert after it has set to improve its texture and flavour.
For a deeper traditional flavour, jaggery can be used along with or instead of some of the sugar.
