Phirni Dessert: A Timeless Mughlai Delicacy

Ingredients

1 litre full-fat milk

¼ cup basmati rice

½ cup sugar

¼ teaspoon cardamom powder

10–12 saffron strands

1 teaspoon rose water (optional)

2 tablespoons chopped almonds

2 tablespoons chopped pistachios

1 tablespoon chopped cashews

Silver leaf (optional for garnish)

Instructions

Soak the Rice

Wash the basmati rice thoroughly and soak it in water for 30 minutes.

Grind

Drain the soaked rice and grind it into a coarse paste using a little water.

Boil the Milk

Heat the milk in a heavy-bottomed pan. Bring it to a gentle boil while stirring occasionally.

Add Rice Paste

Slowly add the ground rice paste to the boiling milk, stirring continuously to prevent lumps.

Cook

Cook over low to medium heat for 20–25 minutes until the mixture thickens into a creamy consistency.

Sweeten

Add sugar, saffron strands, and cardamom powder. Stir well until the sugar dissolves completely.

Flavor

Mix in the rose water for an extra floral aroma.

Cool

Pour the Phirni into serving bowls or traditional earthen pots. Allow it to cool to room temperature.

Chill

Refrigerate for at least 3–4 hours until nicely chilled.

Garnish & Serve

Top with chopped almonds, pistachios, cashews, saffron strands, and silver leaf before serving.

Tips for Perfect Phirni

Use full-fat milk for the richest texture.

Stir continuously while cooking to avoid lumps.

Ground rice should be slightly coarse, not completely smooth.

Chill for several hours before serving for the best flavor.

Earthen pots naturally absorb excess moisture and enhance the dessert's aroma.

Adjust sugar according to your taste.

Add mango puree, rose syrup, or fresh berries for modern variations.
