Ingredients

1 cup sugar

2½ cups water

¼ cup ghee

10–12 cashews

12–15 raisins

½ teaspoon cardamom powder

A pinch of saffron soaked in 1 tablespoon warm milk (optional)

A few drops of natural yellow or orange food color (optional)

How to Make Rava Kesari

Roast the Dry Fruits

Heat 2 tablespoons of ghee in a heavy-bottomed pan. Fry the cashews until golden, then add raisins and cook until they puff up. Remove and keep aside.

Roast the Rava

In the same pan, add the remaining ghee and roast the semolina over medium-low heat for 5–7 minutes until aromatic. Do not let it brown.

Boil the Water

In another saucepan, bring 2½ cups of water to a rolling boil. Add saffron milk or a few drops of food color if using.

Cook the Rava

Gradually add the roasted semolina into the boiling water while stirring continuously to prevent lumps. Cook for 3–4 minutes until the water is absorbed.

Add Sugar

Add the sugar and mix well. The mixture will loosen slightly before thickening again. Continue cooking on low heat.

Finish the Sweet

Stir in the cardamom powder, roasted cashews, raisins, and the remaining ghee. Cook for another 2–3 minutes until the mixture leaves the sides of the pan.
