Kesar Shrikhand is a rich, creamy and aromatic Indian dessert made with hung curd, powdered sugar, saffron and cardamom. Popular in Maharashtra and Gujarat, this traditional sweet is especially enjoyed during festivals, celebrations and family gatherings.

The combination of thick yogurt, fragrant saffron and cardamom gives Shrikhand a smooth texture and delicious flavour. It requires very few ingredients and does not need any cooking, making it an easy dessert to prepare at home.

Ingredients

500 grams thick full-fat curd

¾ to 1 cup powdered sugar, according to taste

10–12 saffron strands

2 tablespoons warm milk

½ teaspoon cardamom powder

1 tablespoon chopped pistachios

1 tablespoon chopped almonds

A few saffron strands for garnishing

How to Make Kesar Shrikhand

Prepare Hung Curd

Place a clean muslin cloth over a bowl and pour in the curd. Tie the cloth securely and hang it for about 4–6 hours, preferably in the refrigerator, to remove excess whey. You will be left with thick, creamy hung curd.

Soak the Saffron

Add saffron strands to warm milk and leave them for about 10–15 minutes. Gently rub the saffron into the milk to release its colour and aroma.

Mix the Ingredients

Transfer the hung curd to a bowl. Add powdered sugar, saffron-infused milk and cardamom powder. Whisk gently until the mixture becomes smooth and creamy.

Add Dry Fruits

Mix in chopped pistachios and almonds, reserving a little for garnishing.

Chill and Serve

Refrigerate the Shrikhand for at least 1–2 hours. Garnish with saffron strands and chopped nuts before serving.

Tips for Perfect Kesar Shrikhand

Use thick, fresh full-fat curd for the best texture.

Do not skip the hung-curd step because excess water can make the Shrikhand runny.

Add sugar gradually and adjust it according to your taste.

Always use warm, not boiling, milk to soak saffron.

Chilling the Shrikhand improves both its flavour and consistency.

Serving Suggestions

Serve chilled Kesar Shrikhand on its own or pair it with hot puris to make the classic Shrikhand-Puri combination. It is also a wonderful dessert for festivals, weddings, birthdays and special family meals.
