Malai Roll is a rich, soft, and creamy Indian dessert made with fresh paneer, milk solids, and flavored sugar syrup. Popular in sweet shops across India, this delicacy is known for its melt-in-mouth texture and delicate sweetness. It is often prepared during festivals, weddings, and special celebrations.
This dessert combines the richness of malai (cream) with the softness of chenna (fresh paneer), rolled into elegant cylindrical shapes and sometimes garnished with dry fruits or saffron.
Ingredients for Malai Roll
For Chenna (Paneer Base)
1 liter full cream milk
2 tbsp lemon juice or vinegar
1 cup sugar
1/2 cup water
For Cream Filling (Malai Layer)
1 cup fresh cream or malai
2 tbsp powdered sugar
1/2 tsp cardamom powder
1 tbsp chopped pistachios & almonds
Few saffron strands (optional)
Step-by-Step Recipe
Prepare Chenna (Paneer)
Boil milk in a pan.
Add lemon juice slowly to curdle the milk.
Strain using a muslin cloth and wash with cold water.
Hang for 20–30 minutes to remove excess water.
Knead the chenna until smooth and soft.
Make Sugar Syrup
Boil sugar and water together.
Cook until slightly sticky (not too thick).
Keep aside to cool.
Shape the Base
Roll kneaded chenna into a thin rectangular sheet.
Cut edges evenly for a clean shape.
Prepare Malai Filling
Mix fresh cream, powdered sugar, cardamom powder.
Add chopped dry fruits and saffron.
Assemble Malai Rolls
Spread malai mixture evenly over chenna sheet.
Roll tightly like a swiss roll.
Cut into equal pieces.
Dip lightly in sugar syrup or brush on top.
Serving Tip
Chill the malai rolls for 1–2 hours before serving. They taste best cold, soft, and creamy.
