Mango Payesh is a delicious Bengali-inspired dessert that combines creamy milk, fragrant rice, sugar, and the rich sweetness of ripe mangoes. Similar to traditional payesh or Indian rice pudding, this dessert gets an irresistible tropical twist from fresh mango pulp. It is perfect for summer, festive occasions, family gatherings, or simply satisfying your sweet tooth.
Ingredients for Mango Payesh
1 litre full-fat milk
3 tablespoons basmati or short-grain rice
½ cup fresh ripe mango pulp
4–5 tablespoons sugar
4–5 green cardamom pods
8–10 cashews, chopped
8–10 almonds, chopped
1 tablespoon pistachios, chopped
A few strands of saffron
1 teaspoon ghee
How to Make Mango Payesh
Wash the rice thoroughly and soak it in water for about 15–20 minutes.
Heat the milk in a heavy-bottomed pan over medium heat.
Once the milk starts boiling, add the soaked and drained rice.
Cook on low heat, stirring frequently, until the rice becomes soft and the milk thickens.
Add sugar, crushed cardamom, and saffron. Mix well and cook for another 5–7 minutes.
Add chopped cashews, almonds, and pistachios.
Turn off the heat and allow the payesh to cool completely.
Once cooled, gently mix in the fresh mango pulp.
Refrigerate the Mango Payesh for at least 1 hour.
Garnish with chopped mango pieces and nuts before serving.
Tips for Making Perfect Mango Payesh
Use sweet, fully ripe mangoes for the best flavour.
Do not add mango pulp while the payesh is hot, as the milk may curdle.
Alphonso, Kesar, or another naturally sweet mango works particularly well.
Adjust the sugar according to the sweetness of the mango.
For a richer texture, always use full-fat milk.
Serve chilled for a refreshing summer dessert.
